Tolsta Chaolais CroftersTolsta Chaolais mutton is produced by an informal co-operative of crofters from the village working together to keep this traditional system alive.

Tolsta Chaolais is a very old fashioned village. Crofters here still graze their sheep in the traditional way, on the island's open hills and moors, going out at intervals to gather them in accordance with the dictates of the village calendar.

In the past all the island's sheep were kept in this way, now there are very few beasts sharing the grazings with the Tolsta Chaolais Blackfaces.

The Tolsta Chaolais men are also an endangered species. Like their dogs and their sheep, they are at home in this wild, rugged and unusual environment.
